Cherry Blender Sorbet

This is easy, fast, healthy, and makes for a perfect treat on a hot summer’s day. It’s firmer than a smoothie, but it’s mushier than a sorbet, so it would work for a smoothie bowl too. You do need a high-powered blender like a Vitamix to achieve the right texture. You can top with dark chocolate chips, cacao nibs, sliced almonds, or fresh or dried cherries. Popping your serving bowls into the freezer for 10 minutes or so before making and serving sorbet will help prevent it from melting too quickly.

A half-cup kiddie serving of this refreshing sorbet supplies more than 15% of the magnesium a four-to-eight-year-old needs daily. Cherries are a good source of magnesium, a nutrient that is important for muscles, nerves, and bones.

This makes two cups of sorbet (4 little kid servings)

Ingredients

2-1/2 cup pitted and frozen cherries

1/2 cup almond milk

1 tablespoon almond butter

1/4 teaspoon almond extract

1 tablespoon vegan chocolate chips (optional)

Instructions

Place serving bowls in the freezer to chill as you make the sorbet.

Add all ingredients in a high-speed blender and blend on high until smooth.

Scoop into chilled bowls, sprinkle with optional chocolate chips or other toppings, and serve immediately!
